2023 Sauvignon Blanc "Palomino" Six Pack

This young wine shows vibrant, mouthwatering acidity, with notes of lemon, grapefruit, and
key lime. In addition to the forward citrus notes are subtle tropical notes of pineapple, mango,
and gardenia flower. There is incredible energy in the wine, indicating that it will age gracefully
in the bottle, and should gain complexity for years to come. It is most definitely a wine meant
to be enjoyed with food, at the table with friends and family.

The second vintage of our new favorite white wine, the Cervantes “Palomino” Sauvignon Blanc, is pure pleasure. 2023 was a growing season unlike any we have had in the past decade. Ample winter rains and a relatively cool spring helped the vines to grow strong, without excessive vigor. The crop was generous but balanced, and the summer was remarkably cool
and mild. This made for slow, measured ripening of the fruit and a good amount of “hang time” for the fruit. Harvest came relatively late, but with lower than normal potential alcohol, plenty of natural acidity and heady perfume in the grapes.

The grapes for our “Palomino” Sauvignon Blanc were harvested in the early dawn and delivered to the winery cold and in perfect condition. Whole cluster pressed and carefully settled, the juice was then fermented in a combination of French oak (only 20% new) and stainless steel barrels. This method allows the yeast to add texture and structure to the wine without the oak leaving a fingerprint that is too strong. Aging on the lees for seven months further adds mid-palate weight to the wine, while bottling in late spring maintains the freshness and highlights the delicious fruit character of the vineyard.
